Some of you may have noticed I’ve been posting a lot less than normal, and this was not my intention at all, especially in these weeks coming up to Christmas. I’ve unfortunately been victim to not one, but two colds, back to back, and it’s completely zapped my energy.
A few weeks ago it was my birthday, which I spent in Iceland! This was an amazing trip, and I will be writing it up in a separate post soon. But rather excitingly before I left, my parents gave me the best present ever… a KitchenAid!
The irony of getting this present after I had spent months beating cake batter by hand was not lost on me. Especially as after the book came out I swore I wouldn’t eat any more cake. But I just HAD to try it out when I got back from my trip, so I thought I would show you how to make one of the recipes from my book, “Gluten-free Baking at Christmas“.
So here I present to you, my extremely naff, but rather festive, video showing how to make gluten-free shortbread, with a special guest appearance from my new KitchenAid:
A few people have tried this recipe out and one of the most important tips I can give you is: don’t overbake. You want to take these out of the oven when they begin to brown, not when they are fully browned!
