I have to admit, recipe books are often wasted on me. Even before I went gluten-free, the books I had seemed to be full of dud or simply unappealing recipes.
Since going gluten-free, I have acquired one gluten-free cookbook, and that is “Simply Gluten-Free and Dairy-Free” by Grace Cheetham. It was a birthday present from a friend, and as usual, it has taken me around 6 months to get round to trying any of the recipes. The first recipe I tried was the Ginger Biscuits, and I had to adjust the recipe somewhat to get the batter to stick together. I think I mentally wrote off the rest of the book, thinking that all the recipes would need some sort of “adjustment”.
However, I was looking for a way to use up some apples that were past their prime, and Grace’s apple cake recipe came up. There was no glossy photograph next to it, but hey, I thought, let’s give it a go!
And boy am I glad I did. I always taste batter *just to check* (yeah, right!), and it was absolutely delicious, without that “sandy” gluten-free consistency. The batter was refreshingly thick and cake-like. The recipe called for gram (chickpea) flour, rice flour and ground almonds, but I was out of rice flour and used the same amount of Dove’s Farm blend, which seemed to work.
When it came out of the oven, it smelled fantastic and upon tasting was an extremely soft, fluffy cake. I served it warm with ice cream!
Verdict: A great recipe, and I shall be trying many more from this book! My only issue with this recipe is the line “wait until completely cooled before serving”. REALLY?!?
